Zöld afrodiziákum, avagy pestora fel! // The green aphrodisiac or lets pesto!

Kedves éhes barátaim - remélem, nem veszitek zokon, ha kapok az alkalmon így Valentin nap közeledtével (noha úgy vélem, a szerelem nem egy nap ünneplésből áll, de ez más tészta...apropró tészta, van kedvenc tésztátok? én most újra felfedeztem az orecchiette apró fülecskéit, mert hogy alakjuk olyan, mintha apró fülkagylók lennének, egyébként tipikus déli tésztaremek, lentebb képen is láthatjátok!) és egy afrodiziákumnak, vagyis természetes vágyfokozónak számító ételt mutatok be ma este. Valószínüleg már sokan ettétek tésztán, na de milyen tésztán? Mi olaszok ezt a bazsalikomból, fokhagymából, fenyőmagból, olivaolajból és parmezánsajtból készült szószt 4 féle tésztán fogyasztjuk előszeretettel: spaghetti, orecchiette, tagliatelle és trofie (erről már korábban írtam, lásd: http://marcoincucina.blogspot.com/2012/01/trofie-tricolore-al-pesto-verde.html).

Ma tészta helyett a toast mellett döntöttem - azonban a mai főzésem különlegessége, hogy a pestot saját kezüleg készítettem, egy, a toszkánai nyaralásom alatt vásárolt méregzöld márványmozsárban - és újfent bebizonyosodott, hogy a házi készítésű dolgoknak nincs párja!
A pesto egyébként ősi eldelnek számít, korai, i.sz. 800-ból származó írásokon is említik az összetört bazsalikomot, fokhagymával fűszerezve. A pesto készítése és annak receptje családi hagyomány és mondanom sem kell, hétpecsétes titoknak számít, mindenki a maga receptjére esküszik!
Remélem, hamarosan alkalmam nyílik és Neked, kedves olvasó is elkészíthetem a Marco-féle pestot!

My dear hungry friends - I hope you don't mind that I use the occasion of Valentine's day (though for me love is not only about one day, but that's a different topic) and recommend you an aphrodisiac, the green pesto. Most probably many of you already tried it on different types of pasta - by the way what is your favourite pasta? I re-discovered orecchiette, a typical southern pasta (see the pic) in the shapes of little ears. We also eat pesto with spaghetti, trofie (this I already wrote about it, see  http://marcoincucina.blogspot.com/2012/01/trofie-tricolore-al-pesto-verde.html).
I chose toast instead of pasta tonight and the speciality is that I prepared the pesto with my own hands in a dark green marble mortar which I bought during my holiday in Toscana last summer and again, it is proven: the best things are homemade!
Pesto has old history - back in a.d. 800 they mention it and every family has its own recipe - of course keep it as a secret.

Trofie tricolore al pesto verde

Ciao a tutti - as I asked you a question earlier today, regarding what is trofie? it is fair if I also provide you the answer.
Trofie is a typical pasta, from north-western part of Italy, the region is called Liguria, you can also find here more info: http://en.wikipedia.org/wiki/Liguria.

I was there some time ago and bought this beautiful tricolor trofie which is not industrial but was made by a small local producer - mmmm...you can guess the taste!
I show you now a typical usage of this pasta, which is the green pesto (pesto verde). I am sure many of you already tried the pesto, but did you know that also red pesto (pesto rosso) exist? That one is typical in southern Italy, particularly in Sicily, where they add tomatoes and almonds (instead of pine tree seads) and less basil.

When the pasta is ready (we prefer to cook it "al dente" which means you do not overcook it, but only until the pasta is medium hard) you can mix it with the pesto (homemade is the best and not so difficult by ingredients but the quantity makes the difference, as it can change the whole taste) and you add some ground parmesan cheese and pine tree seeds on the top.

Pesto is quite popular in Liguria, and they put it not only on pasta but as well on little cooked potato pieces or on french beans.
